Some journeys are taken by train, ship, or car. Ours unfolds right at the table, with a glass of wine in hand and a spoonful of caviar.
Our journey begins near Rome—just a bit further south in the Agro Pontino area. Here, the Bellone grape, an ancient variety cherished since Roman times, comes to life in Casale del Giglio’s Anthium. This crisp, savory white wine brings a distinct sea breeze straight to your glass, pairing beautifully with the rich, velvety texture of Calvisius Tradition Prestige caviar.
Next, we travel down the coast to Furore, along the stunning Amalfi Coast. Here, steep terraced vineyards overlook the sea at altitudes between 200 and 550 meters. In late October, Marisa Cuomo hand-picks fully ripe Fenile, Ginestra, and Ripoli grapes, which are then fermented in barriques. The result is Fiorduva: an intense golden wine with aromas of apricot and broom flowers, remarkably smooth, enveloping, and exceptionally long on the palate. To match its intensity, we pair it with Beluga Calvisius—large, light coloured pearls offering a creamy, complex flavor with a lingering coastal finish.
Our final stop brings us to Sardinia, in the Sarcidano region, where Elena Casadei ages her Semidano di Migiù in terracotta amphorae. Skin contact lends the wine a stunning amber-gold hue and a character that balances structure with vibrant freshness. It finds its perfect match in Calvisius Essentia caviar.
Three caviars, three wines, yet a single source for the caviar: Calvisano, in the province of Brescia, 100% Made in Italy. Crafted using the traditional Malossol method—low in salt and never pasteurized—these caviars retain their natural, beautifully creamy texture. Stop after stop, you will discover how each wine shifts and elevates your perception of the caviar in your spoon.
A masterclass designed for caviar aficionados, wine lovers, and anyone who believes that the finest journeys are the ones you can taste.
